“Apple Cinnamon Muffin” is a super easy sweet bread recipe which has a soft texture. When baked it just spreads its fragrance all over the house. A must try recipe which makes about 18 to 20 small muffins.
Serves: 12 Muffins

Preparation Time: 15 Minutes
Baking Time: 25 to 30 mins
Resting time: 15 to 20 mins
Icing: 10 mins
Ingredients:
2 Eggs
125 g of Butter
2 Cups Flour
1 Cup Castor Sugar
½ Cup Milk
2 ½ tsp Baking Powder
½ tsp Salt
½ tsp Vanilla Essence
1 Medium Apples peeled and diced (Small size)
1 tsp Fresh Orange Zest
4 tbsp Castor Sugar (For Apples)
½ tbsp Cinnamon Powder
300 g Powdered Sugar
150 g Butter (Room temperature)
2 tsp Vanilla Essence (For frosting)
6 tbsp Milk
Cinnamon Sugar
Method:
Pre – heat the oven to 180 °c.

In a small mixing bowl mix apples, orange zest, castor sugar and cinnamon. Set aside for about 5 mins.

In a large mixing bowl, whisk butter and sugar to a smooth paste. Add in milk, vanilla essence and eggs and whisk together for about 2 mins.

Sift in flour, baking powder and salt and mix well.

Add in the apple mixture and form into a smooth batter.Scoop the batter into muffin pan layer with paper cups. Fill in each cup 2/3 rd full.  

Bake for about 25 to 30 mins until muffins turn golden brown.

Once done, place the muffins on a cooling rack and let it cool down completely.

In a mixing bowl sift powdered sugar and add in butter, vanilla essence and milk and whisk into a smooth paste. (If the frosting is too smooth, add in sugar to increase the consistency and if the frosting is too thick add in little milk to make it smooth)

Using a spatula apply the vanilla frosting in a circular motion on the muffin. Snow Cinnamon Sugar on top and enjoy fresh.
