“Welsh Cakes” also known as “Pice ar y maen” is a traditional tea – time Welsh snack. This simple recipe which even kids can make. There are many different additions one can do to this basic recipe. You can add currants, dry figs, raisins etc combined with spices such as nutmeg, cinnamon, all-spice, etc. I found it as and easiest and quickest way to make Cakes. The texture of this cake is not spongy but a bit crispy. Usually served alone; you can also give an option to smear some marmalade or jam with it.

Cooking Time: 10 to 15 mins
Ingredients:
250 g self – rising flour
1 tsp chai masala
75 g Castor/ Powdered sugar
75 g raisins or sultanas
120 g butter (cut into small pieces)
1 cold egg
Splash of milk (if needed)
Cinnamon sugar to snow on top
Method:
Sift self – raising flour, chai masala and sugar in a bowl.

Add in the butter and use a fork or your hand to mix. Once mixed the mixture will look like a short – crust pastry dough. It would be buttery and crumbly.

Add in raisins or sultanas and mix again.

In a separate bowl, lightly beat the cold egg.

Combine the beaten egg with the flour mixture to form dough. You might need to use 1 to 2 small spoonfuls of milk to bring the dough together. If working in cold weather the milk would be needed. Hot weather conditions tend the butter to soften up and become a good binding agent. In such cases, milk is not needed.

Once the dough comes together, lightly flour your working surface and roll dough into ¼” thickness.

Use a cookie cutter or a medium bowl to cut small rounds out of the dough.

Heat a heavy base iron pan/skillet/flat griddle. Lightly grease with butter and place as many rounds you can on it. Turn the heat to low and allow the cakes to cook on both sides for atleast 3 to 4 minutes. You need to make sure cakes are cooked through so do the cooking on low heat. Once cakes are nice and golden brown on both sides which means that they are cooked and crisped; place the cooked cakes on to your serving platter.

Use a sieve to dust the cinnamon sugar over the cakes.

Serve with hot chai or coffee. You can serve these cakes with some marmalade or jam if desired.
